A berry good Christmas

From bread sauce to gravy to pickles and more, Christmas condiments have become as much a staple part of the traditional Christmas Dinner as the main affair itself. If you’re planning on cooking this year’s Christmas dinner we caught up with our Exec Chef, Wayne Pike to find out his top recipe ideas for the most festive of sauces!

Ingredients

500g Cranberries

1  Orange Zest

Juice of half an orange

65g caster sugar

25g demerara sugar  

1-star anise

1 pinch of cinnamon

1 pinch of nutmeg

50ml port

Method

1)Put the cranberries into a pan add the orange zest, juice, both sugars and the spice on a low heat. 

2)Slowly bring up to the boil then cook slowly till the mix starts to thicken and the moisture has reduced. 

3)Mix through the port and cook till you have a jam consistency this can take an hour or so.

4)Remove from heat and cool when you serve make sure it’s at room temp to get the best flavour.
