Our Best Heritage Tomato and Panzanella Salad

Isle of Wight tomatoes are doing their bit to help protect our planet for future generations – from harvesting rainwater to irrigate their crops, to using natural predators and pollinators, they’re on a mission to be climate positive and not only that with one of the best climates in the UK they taste incredible.

Heritage Tomato and Panzanella salad
Ingredients
60g sourdough bread
30g breakfast radishes
15 watercress
30ml Cold-pressed rapeseed oil
Pinch of salt/ Twist of pepper
20g lovage
20g pickled shallots
130g Isle of Wight heritage tomatoes
20g flat-leaf parsley
Preparation
Tear the bread into small pieces, season and dress with rapeseed oil, and bake in the oven until golden and crunchy.
To order, slice the tomatoes into different shapes & sizes
Place into a mixing bowl with the seasoning, rapeseed oil, parsley, sliced radish, lovage, sliced pickled onions & watercress
Place into a bowl and top with the croutons
